We research, we interpret, and then we reinterpret. However, our aim is not to innovate merely for the sake of innovation. We are intentional about pushing the boundaries of culinary knowhow while respecting traditions. Our cuisine is familiar yet new, comforting yet refreshing, all packaged into shared plates and small bites – a form of dining akin to “Asian tapas”. CHEF DALI Born in Melbourne to Hong Kong Cantonese parents, Chef Dali has lived in 10 cities, spanning 7 countries and 4 continents. After spending his early career in finance, Chef Dali left his corporate job to become an entrepreneur. Subsequently, his ventures have taken him to some of the most far-flung places on earth, from artisanal gold mines in Indonesia to cartel-controlled territories in rural Mexico. Wherever he travels, he will rummage the backstreets of neighbourhood markets in search of local produce and street food. Then in 2020, and without having attended culinary school, Dali decided to follow his passion in food and embark on his journey to become a chef. Chef Dali has worked and trained at several renowned restaurants in Shanghai, including Kor, Heritage by Madison, Anarkia, the three-Michelin starred Tai‘an Table. Most recently he was awarded the prestigious That's Shanghai 2023 "Chef of the Year".
