Tsushima Suisan Co., Ltd
Japanese Cuisine (Washoku) is since 2013 included on the list of UNESCO Intangible Cultural Heritage. The reason for the recognition by the committee is made clear by the following quote “[…] with an essential spirit of respect for nature that is closely related to the sustainable use of natural resources.” This recognition has significantly increased the pressure on Japan to achieve a sustainable consumer economy for future generations. For example, Unagi is since 2013 in Japan on the Red List and as counter reaction of the populations Unagi-consumption, import of surrounding Asian countries have risen. The ideal of the UNESCO shows domestically a different face than officially acclaimed. Tsushima Suisan sees its role in the future as a provider of domestic cultural seafood with sustainable fishing methods. Washoku needs its original resources to provide the authentic taste, which makes Japanese cuisine so famous in the first place. Unagi is with prospect of recovery still a far away of being wild caught for commercial use. Anago (Unagis cousin) is also used in plenty similar dishes as its relative. The difference is, that it is still abundant in the depths of Tsushima in Nagasaki. To keep it a reliable source for Japanese dishes, we will do anything to protect this prosperity of taste. Due to the pricing of wild, suitable caught Anago, cheaper imports are making our business domestically challenging. To use this situation for the better, we focus on the vast Cuisines around the world to promote our products and our way of sustainable fishing, and discover new taste experiences for our native fish.
