About Brian Murray

As an R&D manager at Arrabawn Tipperary, I have led the research and development of innovative dairy products and processes that deliver nutritional and functional benefits to consumers and customers. I have over 20 years of experience in food and dairy science and technology, with a PhD in Peptide & Protein Chemistry/Food Science from the University of Limerick. I have a strong track record of managing and delivering multidisciplinary projects that span from product and process innovation, to process improvement, to product application, in collaboration with internal and external partners. I have also published multiple papers in peer-reviewed journals and presented at international conferences on a variety of topics such as the anti-inflammatory properties of bioactive peptides from milk. I am passionate about advancing the knowledge and practice of food & dairy science and technology, and contributing to the growth and sustainability of the wider food and dairy industry.
