About Dimitra Graikini

With a PhD in Food Science and Technology from the University of Zaragoza (funded by a Marie Curie scholarship) and a Master’s in the same field, my research focuses on exploring bioactive molecules found in nature to create practical applications. My Master’s project centered on optimizing the extraction and encapsulation of antioxidants from propolis, while my doctoral research examined the antimicrobial potential of proteins and peptides derived from dairy byproducts, aiming to fight infections caused by rotavirus and foodborne bacteria. Whether for food, cosmetics, or therapeutics, I work to transform nature’s resources into innovative strategies with real-world benefits. Having worked across Spain, Denmark, Greece, Ireland, and Italy, I’ve had the privilege of collaborating with diverse teams, drawing from different perspectives to solve complex challenges. I thrive in multicultural, multidisciplinary environments where collaboration sparks creativity. With expertise in molecular biology (proteomics, genomics, in vivo cultures, and animal experimentation), my focus is on developing therapeutic solutions that can make a meaningful impact in everyday life.
