About Ivan Russo
I began my culinary journey working in traditional Italian restaurants for the first five years of my career, starting at the age of 15. At 20, I furthered my training at ALMA, the prestigious culinary school in Colorno. Following my studies, I had the privilege of working with some of the best chefs in the industry. I spent time at Caino with Valeria Piccini, where I honed my skills in a Michelin-starred environment. Later, I worked with Rocco De Santis at Vistamare, earning valuable experience in a one-star Michelin restaurant. In 2017, I moved to Paris to work at the renowned Joël Robuchon restaurant in Saint-Germain, where I stayed until 2020. My time there was an incredible opportunity to refine my craft under the guidance of one of the world’s greatest chefs. In October 2020, I took on the exciting challenge of opening the Robuchon Atelier in Dubai, marking a significant milestone in my career.
