From my days as an field Archaeologist, Art Handler, and into my current role as a butcher for a fine dining restaurant I have always sought for new, inventive, and better ways to succeed in whatever role I have found myself in. My current role has me maximizing yield of protien from locally sourced meat, seafood, and produce from Central Texas and the Gulf Coast for one of the top restaurants in Austin, Tx. specializing in "New Texan" cuisine.
