I thrive on the sharing of knowledge and I find intellectual curiosity contagious. With over 15 years global experience in the retail, artisan and semi industry bakery market, I'm currently practicing natural fermentation, use of ancient grains, general troubleshooting and innovating new and adventurous recipes. My mission is to help our clients get the best all round support to provide top selling products to the market and for the consumer to benefit from the magic of Sourdough and more simple clean label recipes. After been fortunate enough to receive numerous prestigious Baking awards in Australia, I then packed a suitcase and ventured to Europe where I have been busy mastering European style breads and sourdough baking. Spending the past 5 years training and been trained both by external and internal clients from many cultures, climates and not to mention languages has been such a wonderful adventure and I wish to share this sourdough passion throughout the world. I now return to the APMEA region to bring the Sourdough magic back home and share inspirational ideas and develop new finished good applications with fellow passionate bakers. I enjoy travelling, learning about food cultures and visiting as many bakeries as I can all over the world. We at Puratos believe "The future of bread lies in its past", so I am proactively encouraging bakers to implement longer fermentation processes and better their final applications with both intense aroma's and flavours. Healthier and Happier baking is something I strongly believe in. As an TAFE Ambassator and a strong believer in Vocational Education and Training in Australia, I wish to promote the Baking Industry as a sound career choice, inspiring young bakers to follow their dreams and believe in a very bright future for themselves.
