Committed to natural, non-interventionary winemaking practices: utilizing all native yeasts / spontaneous fermentations, foot treading grapes as needed, no sugar or acid corrections of any kind, no new oak, utilizing alternative vessels such as concrete and amphorae, and just a small amount of sulfur added prior to bottling.
