About Paul Breen

Over 2 decades of hands-on experience in hospitality, having successfully founded and operated three food and beverage outlets in Dublin — including two restaurants and a gourmet food store. From concept development through design, build, and over 10 years of day-to-day operation, through Covid and on to sell all 3 business in 2023 Head of Projects and Mobilisations at KSG, where I lead the end-to-end delivery of high-impact hospitality concepts across Ireland. Over the last 18 months KSG have undertaken the biggest transformation project in the history of the company. 4 Bars and 8 Cafes and restaurants across the terminals in both Dublin and Cork Airports. Transforming and Elevating the food and beverage offering across both airports. These projects reflect KSG’s commitment to innovation and guest experience and has been the most exhilarating experience with my KSG colleagues. My role involves full project ownership — acting as the lead interface between clients, stakeholders, architects, contractors, and on-site teams. I’m responsible for ensuring every detail aligns with brand, operational, and commercial goals.
