About Swati Mitharwal

I hold a PhD in Food Science and Technology from National Institute of Food Technology Entrepreneurship and Management. I have a strong research background with demonstrated experience of more than 7 years in cereal and legume processing and their food applications. In my PhD studies I worked on potential application of underutilized legumes, nutricereal and greens as plant-based ingredients for development of gluten-free bakery products with enhanced nutritional and functional attributes. I am experienced in designing and conducting literature review and research experiments, food sample preparation and analysis, data collection and record keeping, statistical analysis, data visualization and data interpretation. Further, I have experience in various aspects of quality assurance work of food manufacturing company. I have sound knowledge of food safety and quality management systems, HACCP, GMP, GLP, SQF, Food Allergen Management, Food Laws and Regulations, FDA, CFIA, Health Canada. I am self-motivated, resilient, and hardworking team player with ability to lead and take initiatives. I have strong communication skills and have published 5 peer reviewed scientific articles and 3 book chapters with one oral presentation award to my credit. I am UGC-NET, ASRB-NET and GATE qualified and a recipient of UGC-Junior Research fellowship and Senior Research Fellowship from year 2016-2021 to pursue PhD studies. My research interest lies in the field of cereal and legume processing, food product development, food encapsulation and dehydration, membrane processing of juices and edible films/coatings.
