About Tom Ocallaghan
Dr. Tom O’Callaghan is a Senior Lecturer in Sustainable Dairy Processing in the School of Food and Nutritional Sciences at UCC. Tom graduated from UCC with a BSc in Food Science in 2014 and PhD in Science in 2018. Tom’s research has focused on chemistry, nutrition and processing technologies across the supply chain, with particular emphasis on the effects of production practices, cow feeding systems and dairy processing technologies on the quality, nutritional and functional characteristics of milk and dairy products.
